Coconut Cream Pie

Bring a taste of the tropics to your table with this creamy sweet
classic.

  Makes: 8 servings
Preparation Time: 25 minutes
Cook Time: 5 minutes
Chill Time: 3 hours

1/4 cup flaked coconut
3/4 cup SPLENDA No Calorie Sweetener, Granular
1/3 cup cornstarch
1/2 teaspoon salt
2 1/2 cups 1% low-fat milk
2 egg yolks
2 tablespoons butter
3/4 cup flaked coconut
1 1/4 teaspoons vanilla extract
1/4 teaspoon coconut extract
1 (9-inch) graham cracker crust

PREHEAT oven to 350 F.
BAKE 1/4 cup coconut in a shallow pan, stirring occasionally, 5 to 6
minutes or until toasted. Set aside.
COMBINE SPLENDA , Granular, cornstarch, and salt in a heavy saucepan,
mixing well. Gradually whisk milk into SPLENDA , Granular mixture.
Cook over medium heat, whisking constantly, until thickened and

Sweet and salty crunchy mix

This sweet-and-salty version of the classic "trail mix" includes
whole-grain
cereal and dried fruit, and it's so easily made that even children can
help
prepare it.

What you will need:

2 cups cereal, preferably whole grain, such as old-fashioned rolled
oats,
puffed whole wheat or brown rice, or low-fat granola
2 cups thin pretzels (preferably salt-free), broken into small pieces
1/2 cup walnuts or almonds
1/2 cup pumpkin seeds
1/2 teaspoon turmeric
2 cups mixed dried fruit (preferably unsweetened), such as raisins,
cranberries, apples, and dates
1/4 to 1/3 cup honey
Canola oil spray
How to make it:

Preheat oven to 350 F if baking 15 to 20 minutes, or 300 F if you
choose to
slow roast 45 to 60 minutes. (Although slow roasting takes more time,
it
also deepens the flavor of this snack.)
Set aside 2 baking sheets.

Almond Joy Cookies
2 (1 ounce) squares bittersweet chocolate
1 can sweetened condensed milk
1 teaspoon vanilla extract
Pinch of salt
1 bag whole almonds
3 cups coconut

Preheat oven to 350 degrees F.

In a saucepan melt chocolate and milk. Stir in vanilla extract and
salt. Pour over nuts and coconut. Drop by spoonsful onto baking sheet.
Bake 10 to 12 minutes.

Applesauce Jumbles with Browned Butter Glaze

Applesauce Jumbles with Browned Butter Glaze
Makes 5 dozen.

2 3/4 cups all-purpose flour
1 1/2 cups firmly packed light brown sugar
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup applesauce
1/2 cup shortening
2 eggs
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/4 teaspoon ground cloves
1 cup seedless raisins
1 cup nuts, chopped

Mix together all ingredients. If dough is soft, cover and
refrigerate until a little firmer.

Drop dough by rounded teaspoonsful about 2 inches apart on ungreased
cookie sheet. Bake in preheated 375 degree F oven until almost no
indentation remains when touched - about 10 minutes.

Immediately remove from cookie sheet; cool and spread with Browned
Butter Glaze.

Browned Butter Glaze
1/3 cup butter
2 cups confectioners' sugar
1 1/2 teaspoons vanilla extract
2 to 4 tablespoons hot water

HAWAIIAN SWEET POTATOES

2 Cups mashed sweet potatoes

1 Cup Sugar

1 tsp. Salt

1 Cup Milk

1 Egg(beaten)

1 tsp. Vanilla

1 Cup Coconut

Blend first 5 ingredients until smooth. Add coconut and vanilla. Bake
at 350 degrees for 25 minutes.

TOPPING

1 Small Can Crushed Pineapple

1 Bottle Maraschino Cherries With Juice

1 Cup Sugar

3 Tablespoons Flour. 

Mix in saucepan. Cook until thick, spread on top of casserole.

Vanilla-Almond Crescent Cookies

Vanilla-Almond Crescent Cookies

Baking time: 12 minutes

Yield: 2-1/2 dozen

1-1/4 cups all-purpose flour

1/2 cup finely ground almonds

1/3 cup superfine sugar

Pinch of salt

1/2 cup (1 stick) unsalted butter, cold

2 egg yolks

1 teaspoon vanilla extract

Confectioners' sugar for garnish

  1.. Preheat the oven to 350 degrees F. Line a cookie sheet with
parchment paper.

  2.. In the work bowl of a food processor fitted with the steel blade,
combine the flour, ground almonds, sugar, and salt. Pulse briefly to
blend. Cut the butter into small pieces and add to the flour mixture.
Pulse until the butter is cut into very tiny pieces, about 15 to 20
pulses.

  3.. (To use a mixer and mixing bowl, soften the butter to room
temperature. Beat the butter in the mixing bowl until fluffy, about 2

Holiday Jell-o

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 box red gelatin -- (3 ounce)
1 box lemon gelatin -- (3 ounce)
1 box green gelatin -- (3 ounce)
4 ounces cream cheese -- softened
21 small marshmallows
One small can crushed pineapple -- drained
Whipped topping
Maraschino cherries
Chopped nuts

Make red and green gelatin as directed and let set. Combine lemon
gelatin
with hot water, crushed pineapple and cream cheese in a saucepan. Heat
until cream cheese is melted, reduce heat, add marshmallows and allow
to
melt. Let gelatin set. Add other gelatins and top with whipped
topping,
cherries and nuts.
